Royal Ambarrukmo Introduces “Kolaborasa,” a Seven-Course Culinary Collaboration by Two Leading Chefs

YOGYAKARTA — Royal Ambarrukmo Yogyakarta has unveiled “Kolaborasa,” an exclusive gastronomic showcase that brings together the creative mastery of two of its signature chefs, Mario Oswin and Eko Purjiono. Presented at the Poolside SamaZana Restaurant, the program features a curated seven-course menu that blends modern culinary techniques with the rich flavors of the Indonesian archipelago.

Two standout dishes drew special attention from invited guests. Chef Mario presented Roasted Black Cod paired with truffle sauce supreme and silky potato mousseline, delivering an elegant and refined flavor profile. Meanwhile, Chef Eko showcased his White Aged Beef, served with sweet potato purée, baby carrots, and king oyster mushroom sauce—an ensemble offering layered, harmonious tastes.

More than a dining event, “Kolaborasa” aims to create an intimate atmosphere where culinary storytelling, ingredient exploration, and flavor philosophy come together.
